- • Eggplant parmigianetta on Grana cheese fondue and basil
- • Salmon marinated in squid ink, lime mayo, caramelized red onion, rocket and caper flower
- • Bluefin tuna carpaccio with teriyaki drops, beetroot sauce, fennel gel and dehydrated black olives
First Courses
- • Cavatelli all'arrabbiata with seafood
- • Spaghetti with cherry tomato sauce and cacio ricotta, basil in two textures
- • Orecchiette with pepper cream and stracciatella with dehydrated black olives
- • Purple prawn risotto with tartare, burrata cream and parsley extract

- • Seared bluefin tuna with mixed greens, curry mayo and black sesame seeds
